Wild Garlic Salt

Add a bit of fun to your cooking with some beautiful bright green flavoursome salt made with foraged wild garlic.

This makes a wonderful wild garlic flavoured salt that you can use in cooking or simply to decorate the finished plate. This salt is slightly milder in taste than pure salt, so taste your dish and adjust the seasoning accordingly.

Ingredients:

200g of wild garlic leaves

800g of Himalayan salt

Method:

Clean all your wild garlic, add to a good blender with an equal amount of Himalayan salt, that is 200g of wild garlic for 200g of salt.

Blend as thoroughly as possible, scraping the sides if necessary with a spatula and blending again.

Transfer to a bowl and add the remaining 600g of salt. Mix well together.

Spread the mixture onto dehydrator trays and dehydrate for a few hours. The colour will change from bright wet green to dull dry green. If you don’t have a dehydrator, spread on oven trays and dry in a low oven (50’C) for a couple of hours.

Once dry, break up the salt roughly, put back in the blender and blend again to get a normal salt consistency.

Transfer to a big jar and enjoy!
