I would like to get into lacto fermentation at home, but I have a couple of questions : is it easy and safe ? do I need to buy a lot of equipement ?

yes, lacto fermentation is very easy and very safe. All the recipes in the Fermentation Larder section of the cookbook are very straightforward and easy to follow for beginners.
In terms of equipment, all you need to get you going is a wide mouth Kilner-type jar, a chopping board and a good knife. Not to forget organic vegetables and salt!
